Website: www.dunkerleys.co.uk Recipe – Paella Ingredients – Olive Oil – Pinch of Saffron – 400g Mixed Seafood — Mussels, Clams, Squid, White Fish, Prawns – 4 no. Chicken thighs boned – 6 no. Rashers smoked streaky bacon – 1 no. Medium onion – 2 no. Cloves garlic – 1 ½ Litres chicken stock – 400g Paella rice – 100g Peas – 2 no. Lemons – 2 no. Sprigs parsley – Scrub, clean and debeard your shellfish. – Roughly dice the chicken, bacon and white fish. – Roughly chop your parsley, onion and garlic. – In a large pan, fry in olive oil the bacon and chicken until lightly coloured. Add the onion, saffron and rice stirring for a couple of minutes. Add the stock and bring to the simmer for about 7 to 10 minutes until the rice is just cooked still nut in the middle. – Add the seafood, peas and parsley to maximize colour. Replace the lid for a further 5 minutes. Squeeze in 1 lemon without pips and season to
